Lasagna Roll Ups

Lasagna Roll Ups

You will need:
2lb of Hamburger (I used deer burger)
1 Box of Lasagna noodles
Ricotta Cheese
Shredded Mozzarella Cheese
Spaghetti Sauce (I used a jar and half another of Prego)
Salt and Pepper (optional)

Before I started to brown the meat I put a pot of water on to boil...

Brown the meat- Drain. (I think next time I will put dry onion flakes in it)
After you drain it while it is still hot add ricotta cheese (as much as you would like) Next time I will add some spaghetti sauce to it as well. I didnt this time and I wished I had..

Boil your noodles


PREHEAT your oven to 350°

After the noodles are done leave them in the pan they are in, take them to the sink and pour some of the hot water out while letting cold water run into the pan until most of the hot water is out.. leave the noodles in water at all times so they dont stick together. Pull one noodle out one at a time, running your hand down it carefully to get the excess water off.. Lay on a cookies sheet and put the meat/cheese mixture on the noodle then top with Mozz cheese and I added salt and pepper.. Like I said I will be adding Spag sauce into the noodles next time.. so I recommend it this time lol 

Then roll the noodles slowly towards you..

Place into a 9x13 buttered (or sprayed) baking dish.. I found that 12 would fit nicely into the dish..
Top with Spaghetti sauce and more Mozzarella cheese
Place into oven at 350° for 20-25 minutes

I of course didn't get a picture of the Spag sauce on top OR the finished product but you can use your imagination ;)

Not so Crock Pot Sausage & cheese Tortellini

This is supposed to be a crock pot recipe but I went to the store too late so I put it on the stove..

You'll need:

1 bag of Cheese Tortellini (Thawed - if you do it on the stove)
2 cans of diced tomatoes with Basil/Oregano 
1lb of Hot sausage
1 - 32oz Chicken Broth
1- 8oz cream cheese (softened)

1. Sit out cream cheese to soften.
2. Brown your sausage. Drain.
3. Mix everything, except the cream cheese, in a pot and put it on the stove on Med. 
4. Once its hot cut the cream cheese into chunks and put in the pot. Stir.
5. Cover and cook on Med for about 30 minutes stirring every so often.
6. Turn off the heat and Remove the lid and let it sit for about 30-45 minutes. This will allow for the sauce to thicken up. 


This was a total hit with my guys!!

Creamy Italian Chicken (Crockpot)

Creamy Italian Chicken


                                                                         


I've seen several recipes on Pinterest for Italian chicken in the crockpot. I've seen some who just throw it in there with dry Italian dressing mix and some add a little more.. Well here is my "Throw together" of Italian chicken.. Creamy style!

3-5 Frozen or Thawed Boneless Chicken breasts
1 can of Cream of Chicken
1 can of Cream of Celery
1 8oz cream cheese (softened)
3/4c.Sour Cream
2 packets of Italian dry mix

Mix (I used my hand mixer) together cream cheese, sour cream, cream of chicken and cream of celery. After thats all mixed together stir in the dry Italian mix.

Pour half the mixture into the bottom of the crockpot then lay your chicken in the crockpot. Then pour the remaining half over your chicken.. Cook until chicken falls apart 6-8hours on low. An hour before I served dinner I took kitchen tongs and kinda shredded the chicken a little. I served it on rice and when everyone got seconds everyone had it without rice. I won't serve it on rice again even though it was good.. But better without!

Grilled Cheese Pizza


 

Here is what you need

For one sandwich:

Butter the bread on one side of the slice

Lay the buttered side in a already warm skillet or on a griddle set on Medium-low


Place shredded cheese on the piece of bread


Then add pepperonis

The more cheese this cheese is basically the "glue" to hold the other slice of bread on


Put the another buttered slice of bread on with the buttered side out

 Then flip over


Once that side is done your Grilled Cheese Pizza is ready to eat!


Its best to eat right off the griddle while the cheese is still all nice and gooey!!

This is great for an after school or lunch!!

Country Breakfast Casserole


 

Here is what you will need


1 can of biscuits
1 roll of sausage (or you can buy the already cooked crumbles)
1 Bag of Shredded Cheddar Chesse
6 eggs
1/2c Milk
1 jar of "ready" gravy (or you can use 2 envelopes of the dry mix and make them according to the directions on their packages)
Salt and Pepper

First preheat your oven to 350°

Prepare a 9x13 baking dish with cooking spray

Cook the sausage and drain
(If you are making the dry mix gravy go ahead and make that too while you are at the stove and set aside)

Cut each biscuit in quarters 
*Tip: Pizza cutter works great*

Place biscuit pieces in greased baking dish.

Sprinkle the cooked sausage over the biscuit pieces.

Top with shredded cheese (however much you would like)

Mix in a separate bowl: 6 eggs, 1/2c. milk and a pinch of salt and pepper

Pour over the biscuits, sausage and cheese

Then pour the gravy over the eggs.. 

I put more salt and pepper on top but this is optional

Pop it in the oven for 35-45 minutes just keep and eye on it after 35 minutes to make sure its done before you take it out since oven temps vary..

I made this for my family yesterday morning.. It was a hit!

$8 meal.. say what??

I LOVE crockpot meals!!! This is SO easy and soooo good... this is what you need



CrockPot Chicken and Stuffing

*(Raw) Chicken Tenders or 2 - 4 Boneless breasts (I recomment cutting into strips)

*Sour Cream - 1/2c.

*Cream of Chicken Soup - 1can

*Stove Top Stuffing - 1 box

*Water - 1/4c.

First off I suggest a crock pot liner.. But if you don't have one then spray your crockpot with cooking spray.

Place your chicken in the bottom of your CP.

Pour the dry stuffing mix over the chicken

Mix together Cream of Chicken, Sour Cream and Water together in a separate bowl then pour in the CP on top of the stuffing mixture.

Put on low for 4 hours (if your chicken is frozen then 6hrs)

We had peas with ours..
