Uh oh!! Spilt WAX!!!


All you need is:

Brown paper bag
Clothes iron

Lay the paper bag on the wax and iron away until all the wax is up. Ours took a lot of the bag so you might need a couple bags.

Taco Soup

This soup is AMAZING! My brother is the one who requested this one night at my parents house.. so I got on Pinterest and found the recipe.. My parents bought the supplies and I whipped it up so fast.. We were all in love!





Ingredients needed:
  • 1 lb hamburger meat (ground beef)
  • 1 onion, chopped fine
  • 2 cans of pinto (or ranch style) beans
  • 1 can of corn
  • 1 can of Rotel tomatoes (tomatoes with green chilies)
  • 1 can of plain tomatoes
  • 1 package of dry taco seasoning
  • 1 package of ranch dressing seasoning
Directions:
Cook hamburger meat and chopped onion together. Drain the grease. Add the rest of the ingredients (don't drain the cans) and let simmer for 30 minutes.

*Tip* Serve with any combination of shredded cheese, sour cream, black olives, frito chips or tortilla chips for added interest

Homemade Chicken Strips

Well they are more like chicken strips/nuggets lol some "strips" weren't long enough to be strips so they are nuggets ;)
                                                                           

FIRST: Fill a skillet half way full with oil (I used veg oil), put it on Med heat.

You will need:

Boneless Chicken Breasts
1 Egg
Milk
One sleeve of Ritz Crackers (I used the butter flavored generic ones from Save-a-lot)

Cut up the chicken breasts into strips or nugget pieces

Mix in small bowl, egg and a splash of milk (maybe like a tablespoon or 2). whisk together until its blended well.

Crush up the crackers and put in a bowl.

Dip the cut up chicken into the milk/egg mixture. Then place into the cracker crumbs. Press hard so that the crackers coat the chicken well.. Then place into the skillet after they are all breaded.. Depending on how full your oil is, you may have to flip the chicken in the skillet. Cook on both sides until Golden brown.. I aways pull the fattest chicken strip out first and check to make sure its cooked through before I pull them a out. No one wants raw chickie ;) Place on paper towel covered plate to soak up some grease. Enjoy!

Dorito Chicken Casserole

We eat this a LOT!!! My guys request it all the time it's so good!!



                                                                           

Chicken Dorito Casserole
Serves 4-6

2 c. shredded cooked chicken (If you are feeling lazy you can use two 10oz cans of canned chicken)
1 c. shredded cheese (or more if you are a cheese hound)
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Ro-tel tomatoes (canned tomatoes with green chilies)
1/2 packet taco seasoning (or more- to taste)
Bag of doritos (nacho cheese)

1. Pre-heat oven to 350-f degrees.

2. In a mixing bowl, combine all ingredients except doritos.

3. In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.

Homemade Chimichangas!

I HIGHLY recomment these!!! They are YUMMY!




Chicken Chimichangas

  • 2 tablespoons Vegetable Oil, plus more for frying
  • 1/2 cup diced White Onion
  • 1 1/2 teaspoons minced Garlic
  • 1/2 tablespoon Chili Powder
  • 1/4 teaspoon Oregano
  • 1/2 teaspoon ground Cumin
  • 3 cups cooked, shredded Chicken (I've also used 2 (10oz) cans of Chicken or 1 lb of ground beef if you don't want chicken)
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 can (4oz) Diced Green Chilies 
  • 8-10 (10 inch) Flour Tortillas, warmed
  • 1 1/2 cups Monterey Jack cheese, shredded


TOPPINGS: Salsa Verde, Sour Cream, etc


Directions: In a large, deep skillet, pour in enough vegetable oil to fill half of it. Heat at medium low heat. (This will be the oil you fry the chimichangas in.)

In a seperate large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Throw in the diced onion and saute until slightly softened. Add in garlic, chili powder, oregano and cumin.Cook, stirring until fragrant, about 1 minute. Add the shredded, cooked chicken. Season with salt and pepper. Stir in the green chilies and continue to stir and cook mixture for another 5 minutes, or until thoroughly heated. Set aside.

Warm tortillas in the microwave. On each tortilla, add about 1/2 cup of the chicken mixture into the center. Top with 2-3 tablespoons of the shredded monterey jack cheese. Fold sides over the mixture, then fold bottom over the sides and roll up I used toothpicks to secure them. Place folded chimichangas, seam side down on a large plate/platter, and repeat with remaining tortillas.

Using tongs, lower one chimichanga at a time, into the hot oil, seam side down.  Fry until golden brown on both sides. This only should take a minute or two, depending on how hot your oil is.

Place deep fried chimichangas onto a paper towel lined plate to soak up grease.
REMOVE TOOTHPICKS if you use them!

 Serve immediately with your favorite toppings!

Homemade Sloppy Joe's


                                                                            

"Howa bout sum shlaaappy Joe's?" Have you ever seen the movie Matilda? When that nasty ol' lunch lady ask Matilda that?? I Think of that every time I hear about sloppy Joe's lol.. However I'm not like her lol..  But anyways this is the BEST Sloppy Joe's ever... In my opinion...

Here is what you need:

1 lb. Hamburger
2 Tbsp Vinegar
2 Tbsp Brown Sugar
Salt to taste
1 Chopped onion (browned with hamburger-I used dried mined)
1 c. Catsup
1/2 tsp. Mustard
1/2 tsp. chili powder

Brown Hamburger mixed with onion.

Drain H-burger (if needed)

Mix remaining ingredients together and bring to boil then reduce to simmer until the ingredients blend nicely together and enjoy!

Serve on bread of your choice or eat plain :) or add hotdogs for coneys :)

Grilled Jalapeno Chicken and Ramen Noodle Salad

Grilled Jalapeno Chicken 


                                                                           



Here is what you'll need:
* 1/3 cup fresh lime juice (it took two smaller limes squeezed by hand lol *note to self: Get a juicer*
* 1/4 cup of honey
* 2 tbsp fresh cilantro {I did not use this because Brandy didn't use it lol She didn't have it}
* 2 tbsp soy sauce
* 1/4 tsp salt
* 1/4 tsp pepper
* 3 jalapeno peppers {halved and seeded} ( I only used two)
* 3 garlic cloves
*  skinless chicken breasts {you can do whole breast or kabob} (we did Kabobs)
* cooking spray

Those ppl on cooking shows makes hand squeezing citrus look sooo easy.. well I was a mess lol
1. Place first 8 ingredients in a blender; process until smooth (I had to use my food processor because I burnt 2 blenders up and refuse to buy another

 2. Combine lime juice mixture and chicken in a large, heavy-duty, zip lock plastic bag

3. Seal bag and marinate chicken in refrigerator 1 to 8 hours.

4. Prepare grill and spray with cooking spray. If your doing Kabobs soak your skewers in water before you light the grill.

5. Remove chicken from bag, reserving marinade.

6. Place chicken on grill rack; cover and grill 12 minutes on each side or until done, basting occasionally with the reserved marinade.



Ramen Noodle Salad




Here is what you'll need:
1 pack slaw mix

green onions finely chopped (approx 1/4 cup or less) *My sister used green peppers instead of onion and I liked it too*

1/2 cup toasted seeds (sunflower or almonds)

2 packs ramen noodles (chicken flavor) broken into small pieces

3/4 cup oil

1 tbsp pepper (scant) My pepper made it kinda spicy.. so maybe not THAT much pepper

4 tbsp vinegar

4 tbsp sugar

1 of the chicken pack flavorings in ramen noodle package
Just toss all together.. put on the lid and chill.. I think the longer it sits the better it tastes...

No-Bake Chocolate chip Peanut Butter bites

 They were good but needed something else.. plus they were wet and sticky so I thought.. hmmm I'll roll em in powdered sugar, so I had J-Bird try them plain and then tried them in powdered sugar.. we both agreed PS was the way to go.. So here is MY version of this..




1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1/2 cup mini chocolate chips (DON'T use big ones.. I did, you need minis)
1 tsp vanilla
powdered sugar

Mix everything above in a medium bowl.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and then sprinkle on or roll on powdered sugar and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

*NOTE:: After sitting in the fridge all night they were alittle better and alot more firm.

Italian Beef

Italian Beef




Mix in crock pot: 
1 (1.25 oz) envelope dry onion soup mix 
1 t. oregano 
1/2t. red pepper flakes 
1 t. basil 
1 t. dried parsley 
1 large clove garlic, smashed 
1 cup water 

Place on mixture: 
2-3 lbs. Beef Roast

Serve on a hard Italian roll or a bread of your choice!

I put mine in about 8:30 am cooked on low all day then about 4 I took it out and shredded it and stuck it back in the juices. I had to add a little more water to cover all the meat. I put it on warm and we ate about 6pm. It was yummy!!!

Crockpot Cheesy Chicken Spaghetti

This is soo yummy!!
Crockpot Cheesy 
Chicken Spaghetti  
Serves 12 ( one cup each)





16 oz. dry spaghetti, cooked
1 lb. Velveeta Cheese
12.5 oz can chicken breast, drained & flaked
1 can cream of mushroom soup
1 can cream of chicken soup
10 oz. can diced tomatoes & green chilies (Rotel)
1/2 cup water
1 small onion, diced
salt & pepper to taste


Spray slow cooker with non-stick cooking spray. Combine all ingredients in slow cooker and stir to mix well. Cook on LOW for 2-3 hours. Stir again just before serving.


Sooo okay. I for starters will not be using canned chicken again. You couldn't really taste the chicken so I'll use chicken breasts cut into chunks. Since J-Bird thought it was too hot. I'll use just tomatoes instead of the tomatoes with chilies. We'll see how that tastes :) Oh and maybe some more cheese.. I love cheese :)

Crunchy Cheddar Chicken




1 Sleeve of Ritz Crackers, crushed
6 oz of sharp Cheddar cheese, shredded
1 clove of garlic, finely chopped
3 boneless skinless chicken breasts, halved
1 stick of melted butter
* Heat oven to 350*. Line baking sheet with foil.
* In a bowl combine the crackers, cheese, garlic and salt and pepper to taste.
* Dip chicken in butter then cracker mixture then place on the foil lined baking sheet.
* Sprinkle remaining mixture onto chicken then bake until chicken is golden brown. (25-30 min)

**This is highly requested in our house!**

Crackle Nail Polish

So Avon was having a sale on nail polish 2 for $6.99 so I told J-Bird I wanted some for my stocking.. so I placed the order and got a red color and black (only color they had) crackle polish.. So I decided to try it out...

I don't like the red under it.. I felt Gothic lol.. So I took it off and put pink under it.. but it was a dark pink so it was still kinda Gothic looking.. So I might give my black to my sister in law, no she isn't Gothic lol, but she is 15 and probably like it better than my old 28yr old self lol. Although my sister told me that they have new colors of crackle.. so I might try that.. This crackle polish is WEIRD! You put it on and watch it separate.. I wonder what its made of lol??? Why does my spell check want me to capitolize Gothic?!?!

New Years Eve goodies!

We had a BUNCH of snack/finger foods for our NYE get together. Every one pitched in and brought goodies.. I made a few things.. the first one was

Buffalo Chicken Dip


This is sooo easy and SO good!!

All you need is:
2 boneless chicken breasts
  (I cook mine in the oven at 375* until its done)
8oz Cream Cheese
Ranch Dressing
Hot Sauce (I used Frank's Red Hot Wing Sauce)

* Bake the chicken breasts, shred. Then put in crock pot and add cream cheese (I put on high with lid on and got the cream cheese soft) Then add some hot sauce and then some ranch dressing until creamy. I then turned it on low and let cook until its good and hot.. Adding  Hot Sauce and Ranch dressing if needed. After its real good and hot I'll put the setting to Warm until party time.

This is a MUST try!! You control the "hotness" of the dip.. My 5 year old can eat it because I don't over due it. Its got just the right amount of "kick" lol

Veggie Pizza



Let me just start off by giving you a tip. IF you are new to your food processor be careful putting your veggies in it or you will get THIS

VEGGIE DUST

Chop veggies up on "PULSE" setting hahaha
You'll need:

2 cans of crescents
2-8oz cream cheese
Sour cream
2 packs of dry ranch mix
any veggies you would like
1 bag of shredded Cheese

*Place crescents flat on a cookie sheet. Bake (follow instructions on package for temp and times). Cool completely.

*Mix together Cream Cheese (softened), about 1/2-1c. of sour cream ( you might have to add more) and dry Ranch Mix. Spread on cooled crust. Top with veggies, cheese and what ever you choose. Enjoy!

The last thing I made was a recipe I got from my Grandma. She made these for my wedding back in 05' and ever since I have LOVED them.

Sausage Balls (that's what I call them lol)

 

You will need:
1 roll of Mild Jimmy Dean Sausage (or Brand of your choice)
1 roll of Hot Jimmy Dean Sausage
3c. of dry biscuit mix
2c. of Shredded Cheddar Cheese
1 Strong Man (optional) lol

*Place all ingredients into bowl and mix together.. the best way is to mix with your hands.. it will take awhile to mix it all up. It will look "wet" again when its all mixed together. This is the Step you need a Strong man:
After its all mixed up roll into balls about the size of a quarter and baked at 300* Grandma said 15mins but It was way longer like almost 45 I think.. so keep an eye on them.. they will be nice and sizzling with grease running out of them lol.
